It’s sum-sum-summatime! & who wants to be in the kitchen? NOT ME! Maybe you feel the same way? My summer goal: fast, fresh food. So I’m going to share with you one of my secret weapons that makes any meal a bit fancier. You ready….helloooo Panini press. Yup. Think sandwiches for dinner sound boring? Well. Me too. But Paninis? So gourmet! Just don’t tell your hubby the only difference is that you smooshed them between two hot griddles. Ha! I’ve got my system down. I make them in bulk, then wrap them in foil & pack them for lunches for the next couple of days. Done & done. Gotta love a good multitasking system. I’ve got my favorite five variations today over on my blog, but here’s how we make my caroline’s favorite–they are quite the family affair!
My daughter (3) is in charge of the pairs of bread & “painting” them with melted butter. The only white bread we eat is sourdough–because you can take the girl out of California…but…yeah. Sourdough feels like home to me. So that’s our preferred Panini bread. My little guy has just started wanting in on the action. 🙂
For this batch, we made a family fave: Egg Paninis. Our favorite breakfast for dinner treat. You can add in whatever you like, but we keep it simple: organic eggs + cheese + nitrate free bacon. The butter wash on the bread helps it get nice & crispy. The longer you leave them on the press, the crispier they are. For the kiddies, I take them off as soon as the golden lines show up, or they are too tough to chew. But every bread is different–so experiment!
We serve ours with a nice batch of hash browns, some fresh fruit & a tall glass of OJ. Breakfast for dinner makes everyone in our house happy!
